This wine is a true delicacy, perfect as an aperitif, during an after-work party, with friends or at the end of a meal with a dessert.. Harvested by hand in September, the grapes were immediately cold-soaked for 4 days at the low temperature of 14°C.. Fermentation and maceration took place over 8 days at 26°C in concrete tanks.. This process, creates an homogenous heat spread during the ferment, and as a result, the tannin extraction is gentle and intense.. During this time, pump-overs were conducted periodically.. Malolactic fermentation occurred.. The wine was aged in a combination of French and American oak barrels for 12 months.. This wine is born in Selva, in the 6 hectare property situated at 100 meters above sea level, at the feet of the Montello and next to the Brentella canal, along side road (presa) nine, one of the few destined to remain a dirt track because subject to a law that protects environmental goods.. It’s one of three vineyards subject to a comparative research started in collaboration with the experimental institute for vinegrowing in Conegliano who’s goal is to enhance the DOC Montello e Colli Asolani.. The other two vineyards “Fontana Masorin” and “Ballo delle Streghe” are placed respectively 300 meters away on the Venegazzù ridge and at about 200 m.. away on the Montello hill, between Montebelluna and Venegazzù.. All three are situated on the south side of the Montello and form part of the “Fontana Masorin” farm.. The vine density and growth typology are perfect for a maximum production, that can be regulated by under producing approximately down to 7000-8000 Kg per hectare.. When the fermentation finishes the wine is filtered and stock piled; then it’s left fermenting once again in an autoclave where some liquer del tirage is added at a temperature of 16° C.. Once the spumante is obtained it’s refrigerated at -4° C and left in contact with the yeast.. Once the affinement is concluded the product is isobarically filtred in another autoclave and bottled.. The wine has a pale straw-yellow colour, a joyful, fine and persistant froth shines, glorifying it’s soft and young fragrance.. It’s perfume, with it’s characteristic and aromatic sensations, ranges from fruity to flowery.. It’s taste is soft and velvety but dry thanks to it’s balanced acidic notes.. Splendidly harmonic, it’s without doubt a superior quality product.. It’s surprizing roundness, that tickles for a long time, makes this wine appropriate and apprecheated in any occasions..
